3 sticks of butter (unsalted)
3 cups of sugar (granulated)
5 large eggs
3 cups of all-purpose flour
2 teaspoons of lemon extract
1 teaspoon of butter extract
1 cup of 7UP
Icing Ingredients (Prepare the icing once the cake has cooled):
¾ cup of powder sugar
1 tablespoon of water
1 teaspoon of vanilla extract
1 teaspoon of Lemon extract
1. Preheat oven to 325 degrees. Grease and flour 10-inch Bundt pan.
2. In a large mixing bowl, blend together the butter and sugar until smooth and fluffy. Beat in the 5 eggs, one at a time, then stir in the lemon and butter extracts. Mix in the flour until smooth and add in the 7 UP, mixing until combined.
3. Pour the batter into the prepared Bundt pan. Bake in the preheated oven for 1 hour 10 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool for 30 minutes before removing from the Bundt pan and placing on a cake plate.
In a medium mixing bowl, mix together the powdered sugar, water, lemon extract, and vanilla extract until smooth. Proceed to drizzle the icing on the top of the cake until you reach your desired consistency.
